ROWE BROTHERS TAILGATE GUIDE 2003
We want to help! Tailgating is fun and easy, it can be as simple as a cooler full of your favorite drinks and sandwhiches spread out on a blanket or a full blown party with appatizers, main course, desert and a varity of drinks. We break it doun into several catagories to help make it simple. To put on a large tailgate you need to prepare ahead. We try to have everything done before the day of the game, then on game day we arrive at the tailgate early, setup, start the grills and then wait on our tailgaters and enjoy the day. We have boxes with lables on them to make it easier(such as Kitchen, Grill and so on).We hope the lists below are as helpfull to you as they are to us.

AT THE TAILGATE!
Unload the cooler, chairs, table, set up the flagg. We start the grills and cook up some bagels for breakfast. (Kinda get the gut ready for fluid intake.) Sit back and wait on your tailgaters. Have Fun! Go Boilers!

ROWE BROTHERS RIB RUB
2 TABLESPOONS OF SUGAR
2 TABLESPOONS OF BROWN SUGAR
1 TABLESPOON OF SALT
1 TABLESPOON OF GARLIC POWDER
2 TABLESPOONS OF CHILE POWDER
1 TABBLESPOON FRESH CRACKED PEPPER
1 TABLESPOON OF CAYENNE PEPPER
4 TABLESPOONS OF PAPRIKA
MIX ALL, MAKES AROUND A CUP OF ROWE BROTHERS RIB RUB. WORKS WELL WITH RIBS OR CHICKEN. RUB ON MEAT AT LEAST ONE HOUR BEFORE GRILLING. THEN USE YOUR FAVORITE BBQ SAUCE. WE RECOMEND SOMETHING SWEET WITH THE RIBS.
DICKS CHINESE COLE SLAW
1/2 CUP OF VEG. OIL
1/2 CUP OF SUGAR
1/3 CUP OF CIDER VINEGAR
2 FLAVOR PACKETS FROM CHICKEN FLAVOR RAMEN NOODLES
MIX AND REFRIGERATE OVERNIGHT
2-3 HOURS BEFORE SERVING ADD DRESSING MIX TO:
1 PKG BROCCOLI SLAW
1 CUP CASHEW NUTS
2 STALKS GREEN ONIONS - DICED
2 PKGS OF RAMEN NOODLES - BROKEN
MIX WELL AND SERVE COLD
Al’s a Dip
1 ib of ground beef, browned & drained
1 Packet of Taco seasoning mix.
1 Jar of Salsa ( some prefer "garden style")
1 4oz can of chopped green chiles
In a 9x13 pan; spread 2 15-16oz cans of refried beans.
Pour meat mixture on beans
sprinkle with 2lbs of shredded Taco cheese.
Bake until bubbly
Serve with chips of choice/sour cream, guacomole, beer.
ROWE BROTHERS BBQ SAUCE
1 AND 3/4 CUPS OF WHITE VINEGAR
3 TABLESPOONS OF TABASCO
2 TABLESPOONS OF BROWN SUGAR
1 TABLESPOON OF SALT
2 TABLESPOONS OF CHILE POWDER
1 TABLESPOON OF CUMIN POWDER
1 TABLESPOON OF BLACK PEPPER
4 TABLESPOONS OF KETCHUP
WE LIKE TO COOK THIS MIXTURE FOR ABOUT AN HOUR OVER LOW HEAT. IF IT COOKS DOWN TO MUCH ADD SOME BEER OR WHITE WINE. ADD TO RIBS DURING LAST HALF HOUR OF COOKING. FOR SOMETHING DIFFERENT TRY ADDING HONEY. ALSO INSTEAD OF HONEY TRY LEMON PEAL FOR SOME ZING!

Mix it up, slap a celery stick in there, and GO
ROWE BROTHERS CAROLINA PORK BBQ
6 TO 8 POUND BOSTON BUTT
1 QUART CIDER VINEGAR
1 AND 1/2 OUNCES CRUSHED RED PEPPER
1 TABLESPOON BLACK PEPPER
STIR VINEGAR AND PEPPERS TOGETHER. PREPARE MEDIUM - HOT COALS IN A COVERED GRILL, BANKING COALS WHEN HOT. POSITION DRIP PAN IN CENTER OF GRILL BED, BETWEEN BANKS OF COALS. PLACE PORK BUTT ON GRILL OVER DRIP PAN, CLOSE HOOD. COOK FOR 3 TO 4 HOURS, BASTING FREQUENTLY WITH VINEGAR MIXTURE, UNTIL PORK IS VERY TENDER. REMOVE PORK FROM GRILL, COOL SLIGHTLY, REMOVE MEAT FROM BONE, CHOP AND SERVE WITH HUSH PUPPIES AND COLE SLAW.
Rich’s Chicken Wings
Cook Wings over low heat using beer as a tenderizer
Melt a stick of margerine in a seperate sauce pan
Add a whole bottle of Tobasco to Margerine (small bottle)
Toss cooked wings in sauce.
Tailgaters have eaten our food and survived*!
